The 2024 Bourgogne Aligoté, which had been racked in tank before harvest, has a pretty bouquet with hints of yellow fruit and apricot. The palate is quite malic on the entry, a sharp tensile Aligoté with quite a penetrating finish. I can imagine this with a heaving icy platter of fruits de mer.
