Although the Lamy family had been farming vines in Saint Aubin since the seventeenth century, it was not until 1973 that Hubert created a domaine under his own name. He spent the following decades expanding and replanting, often choosing higher and cooler sites that were not yet in fashion, and quietly set the estate on a more ambitious path. When his son Olivier joined in the 1990s, things took another leap forward. High density plantings, meticulous canopy management and an almost forensic interest in terroir transformed the domaine into one of the most dynamic in the Côte de Beaune. It is a story of foresight, experimentation and a family’s willingness to rethink what their vineyards could be.
