Notes of white truffle, almond paste, Meyer lemon, fresh field mushroom and vanilla pod introduce the 2003 Chablis 1er Cru Les Lys, a full-bodied, concentrated wine that's lavishly textural but which remains tangy and fresh, concluding with a long, sapid finish. The alliance of freshness and texture here is quite special. It's a gourmand, complex Chablis that evokes the white Burgundies of yesteryear.

The 2003 Chablis Les Lys 1er Cru has aged very well, all things considered. Ample and powerful with notable breadth, the 2003 still has plenty of energy, depth and power. Orange peel, chamomile, honey, marzipan and dried flowers add nuance to this potent, deep Chablis from Daniel-Etienne Defaix. A range of floral and savory notes extend the finish nicely. The 2003 has plenty of character - that much is obvious.
